1/2 gal. water
1 ham hock
1 lb. dry split peas
1 cp. chopped onion
2 stalks celery
1 chopped carrot
1 garlīc clove (use more if you like garlic)
1tsp. salt
1/8 tsp. thyme
1 bay leaf
1 tsp. sugar
1/8 tsp. marjoram
1/8 tsp. fresh pepper
Lemon juice, to taste
Worchester sauce, to taste
Milk, as desired (not skim milk)
Potatoes
Sour cream, if desired (put on top of soup in individual bowls)

Directions:
Directions:
Put all of the ingredients except milk in a large pot, and simmer for three hours partially covered. Stir occasionally. Remove bay leaf and ham bone. Cut meat off bone and return to soup. Add milk to thin to desired consistency for serving. Add additional cubed ham if desired.

*Use name brand peas.
*Wash peas and pick out bad ones.
*Use half of seasoning pack that comes with peas.

Great recipe to double or triple. Do NOT let it burn pan on bottom because it ruins the flavor. Use a good pot with a thick bottom.
