1/2 cup butter
1/2 cup crunchy peanut butter
1 egg
1/2 tsp vanilla
1/2 cup brown sugar
1/2 cup white sugar
1 & 1/4 cups flour
3/4 tsp baking soda
1/4 tsp salt

Directions:
Directions:
In a mixer bowl, thoroughly cream butter, peanut butter, sugars, egg and vanilla.
Sift dry ingredients together and blend into creamed mixture

Roll in plastic wrap and chill for at least 1 hour.

Preheat oven to 375º

Shape into 1 inch balls; roll in granulated sugar.
Place cookies 2 inches apart on ungreased cookie sheet.
Bake for about 10 minutes.

You can press cookie down with tines of a fork for a crisper cookie, or let them soften as they bake.
