Ingredients: 8 or so ears fresh corn in season 6T butter, 1 small onion, finely chopped (about 1/2cp) 1/2 tsp salt 1/4 tsp freshly ground white pepper 2 tsp sugar 1 cp light cream
(Just before serving, I add thin strips (not chopped) of fresh basil that I stir in. You cannot do this ahead as basil will darken and look ghastly. It really adds "something.")

Directions:Cut kernels from corn. (Should be about 4 1/2-5cp). In large skillet heat butter and add corn, onion, salt, pepper & sugar. Saute about 6 min. Stir often. Remove from heat, stir in cream and return to low heat until just heated through. Do not boil. |

Notes: This recipe is from a dear Chattanooga, TN, friend who now lives near us in St. Paul. She served this at a dinner "club" of friends who have been meeting together for almost 30 years in order to try to create meals that would be too ambitious for any of us to make alone. Out of the courses there usually are at least 1 or 2 recipes that we particularly enjoy. This one is very "everyday"--but very good-- when Minnesota corn is in season. I personally sauté the onion slightly first (until it "sweats").before adding other ingredients. I do not use sugar as corn is very sweet and I use whole milk (4%) except when I have company. I probably cook corn only about 2-3 min before adding cream as it is so fresh that it cooks like lightning and I prefer a "soft crunchy." Aunt Judy
