1 lb black-eyed peas
1/4 lb bacon, diced (3 slices)
1 large onion, coarsely chopped
2 T. West Indian hot pepper sauce, or to taste
2 t. rosemary
2 t. dry mustard
1 t. chicken bouillon granules
1 cup raw rice
salt to taste
1/2 cup bourbon

Directions:

Cover peas with several inches of cold water and soak for 2 hours.

Sauté bacon in a large Dutch oven, remove and crumble, when cool enough to handle. Add the onion to the drippings in the pan and cook until they begin to brown.

Add peas with their liquid, the crumbled bacon, and all remaining ingredients except the bourbon. Cook for 45 minutes to 1 hour until peas and rice are done. Add bourbon.
