1-1/2 cups crushed gingersnaps
1/2 cup (1 stick) butter, melted
1 envelope unflavored gelatin
1 cup sugar
1 T cornstarch
4 eggs, separated
2 cups milk
2 squares unsweetened chocolate, melted
1 tsp vanilla
2 T rum
1/8 tsp cream of tartar

Preheat oven to 300º

Blend crumbs and butter in a small saucepan. Press evenly over bottom and side of a 9" pie plate. Bake in a slow oven (300º) for 5 minutes; cool; chill.

Combine gelatin, 1/2 cup of the sugar, cornstarch and egg yolks in a large saucepan; beat until blended. Stir in milk until smooth. Cook over low heat, stirring constantly, until custard thickens. Blend 1 cup of the custard with the chocolate and vanilla; pour into crust; chill.

Stir rum into remaining custard; chill until it begins to thicken.

Beat egg whites with cream of tartar until foamy. Beat in remaining 1/2 cup sugar gradually until meringue forms soft peaks. Fold into thickened custard. Spoon over chocolate layer. Chill 2 hours or until firm. Garnish with whipped cream and chocolate curls, if desired.
