4 cups water
2/3 cup orzo or other small pasta
4 scallions, thinly sliced
1/2 tsp salt
1/4 tsp pepper

1 medium tomato, seeded and diced
6 fresh basil leaves, torn
2 Tbsp fresh lemon juice
1 tsp oil
1/4 tsp pepper
1/4 tsp salt

4 4oz tllapia or cod fillets
2 tsp extra-virgin olive oil
1/2 tsp salt
1/4 tsp pepper

2 cups loosely packed baby spinach




Directions:
Directions:
In a small mixing bowl, toss together the tomato, basil, lemon juice 1 tsp oil, salt and pepper.
To seed a tomato cut into quarter, remove the pulp and dice the shell.

In a large saucepan, bring the water to a boil. Stir in the orzo and cook until al dente, about 7-8 minutes.
Drain and return to the pot. Stir in the scallions, salt and pepper.
Set aside.

Meanwhile, warm remaining oil in a large nonstick or cast-iron skillet over high heat until almost smoking. Sprinkle the fish with the salt and pepper and add to the skillet. Cook until browned on the bottom,
about 4 minutes.Turn and cook 4-5 minutes longer until opaque in the center.

TO SERVE: Line each of 4 plates with 1/2 cup of the baby spinach. Top with the orzo and a piece of fish..
Drizzle with the basil dressing and serve
