Lemon Garlic Rice with Rosemary Recipe

2 tbsp Olive Oil
1 sm chopped onion
2 garlic cloves
1 branch of fresh rosemary (I usually skip the rosemary)
1 cup basmati rice (or any rice you have on hand)
2 cups chicken broth
1 lemon, zest ½, juice of the whole lemon
salt & pepper

Heat olive oil in a ten inch skillet, cook onion and garlic for 5 minutes, add rosemary and cook 2 additional minutes. Add the rice, coating it with the oil in the pan. Pour the chicken broth, lemon, and lemon zest into the pan and add salt and pepper. Reduce the heat to simmer and cook for 20 minutes. Fluff with a fork before serving.

While the onion and garlic are cooking I pour the chicken broth into a measuring cup and add the lemon zest and lemon juice as I'm zesting and squeezing to save time.

If your lemon is not large you'll need to add additional lemon juice. More is better. Goes great with chicken. Not sure if it goes with anything else.
