Ingredients:  
1 tin either cream of mushroom or celery soup
1 tablespoon butter
½ small onion chopped
½ cup chopped celery
1 tablespoon lemon juice
Salt and pepper to taste
(1 tin drained chopped mushrooms optional)
1 cup rice (not instant) cooked in 2 cups of water or according to package
1 tin chunk tuna cubed
Sharp grated cheese

Directions:
Directions:
Stir undiluted soup, butter, chopped onion, chopped celery and lemon juice together.
Fold in tuna and cooked rice.
Pour into greased casserole dish.
Cover with grated cheese.
Bake uncovered for ½ to ¾ hour in a 350ºF oven.

Serve with a hearty salad of your choice.
