Flapper Pie Recipe

10 double graham wafers crushed
8 soda biscuits crushed
1 Tbsp sugar
½ cup butter



Cream Filling:
2 cups milk
1 Tbsp corn starch
½ cup sugar
3 egg yolks (save whites for later)
½ tsp vanilla
6 Tbsp sugar

Directions:
Directions:
Combine graham wafers, soda biscuit crumbs, sugar and butter (reserve 1 cup for topping).
Pat remainder of the crumbs in a 9" pie plate and bake at 350ºF for 5 minutes then set aside to cool.
Pour milk into top of the double boiler or heavy saucepan.
Mix cornstarch and sugar and stir into milk.
Add slightly beaten egg yolks and vanilla.
Cook, stirring constantly until mixture comes to a boil and becomes thick.
Pour into pie crust and let cool.

Now beat 3 egg whites, gradually adding sugar until egg whites are firm and form peaks.
Pile gently onto cooked pie filling.
Spread to edge of crust and swirl the whites for an attractive topping.
Sprinkle with remaining crumbs.
Bake at 350ºF for 7-10 minutes or until lightly browned.
