1Package (9 ounces) concentrated mincemeat
3/4 Cup water
1/2 Cup Amaretto di Saronno
1 unbaked deep 9 inch pie shell
3 eggs
1 & 1/2 Cups of milk
2 Teaspoons pumpkin pie spice
3/4 Cup sugar
1 & 1/2 Cups canned pumpkin

In saucepan, combine mincemeat which has been crumbled, water and Amaretto.
Cook to a boil, stirring occasionally, until mixture is very thick. (20 to 30 munutes)Cool. Spread mincemeat mixture evenly in the bottom of unbaked pie shell. Combine remaining
ingredients in a bowl and beat until smooth and well blended. Pour pumpkin mixture over mincemeat in pie shell. I always use a pie crust shield so the crust doesn't get to brown. Bake in preheated oven (370 degrees) for 45 to 55 minutes or until pie is puffed and a
knife inserted in center comes out clean. Cool thoroughly before cutting. If desired pie
may be garnished with whipped cream and pecans.

This is a pie that I made for Thanksgiving in 1972!!!! Believe me Pa Pa really loved this pie!!
