8 c. cleaned and chopped kale
3 T. butter, divided
2 leeks, trimmed, cleaned and sliced
2 T. flour
½ c. cream
½ c. milk
½ c. shredded Havarti cheese
¼ c. seasoned breadcrumbs

1. Preheat oven to 350º. Lightly coat 1-quart casserole with nonstick cooking spray. Cook kale in lightly salted boiling water 3 minutes or until tender; drain and run under very cold water.
2. In saucepan, melt 1 T. of the butter. Add leeks and cook 5 minutes. Add remaining 2 T. of the butter, flour, cream and milk. Cook until thick,stirring often; remove from heat. Stir in kale and cheese. Add slat and pepper to taste. Spoon into prepared casserole; top with breadcrumbs. Bake 15 to 20 minutes, until golden and bubbling.

I use one large leek versus 2.
Don't skimp on the amount of kale or it is too soupy.
Kale took closer to 10 minutes to cook instead of 3!
