1 pound dried red kidney beans (Camelia©)
5 cups of water
2 tablespoons bacon drippings
1 pound smoked sausage
1 large smoked ham hock
1 pound ground beef (fried and drained)
1 can Ro-Tel Chili Fixins©
Chili powder to taste
Salt, cayenne pepper, granulated garlic to taste
2 medium onions chopped
1 green bell pepper chopped
2 stalks green onion chopped
3 teaspoons chopped parsley
1 stalk celery chopped
2 garlic toes chopped

Rinse the beans in a large pot. Check for “ugly” beans and throw them out. Cover the beans with water, and let sit overnight.

Next morning, dump water, add enough fresh water to cover the beans by about 2 inches. Put on high fire.

In a separate pot or deep pan, heat the bacon drippings. Add the chopped seasonings and stir often until the onions are clear.

Add the sausage. Cook until the sausage browns around the edges.

By now the beans should have burst.

Remove the ham hock. Take all the meat off the ham hock, discard the bone, and return the meat to the pot.

Add the sautéed seasonings and sausage.

Add chili powder to taste and chilies. Lower the heat to medium, cover, and let them simmer. Check on the beans periodically to add more water and to stir.

Cook for about 3 hours.

Serve in a bowl with shredded sharp cheddar on top.
