1 bag frozen corn
1 bag frozen baby lima beans
1 pound smoked sausage thinly sliced (I prefer Conecun Original Smoked Sausage)
˝ pound hot sausage links sliced (I prefer Patton’s)
1 small jar Ragu Old World Sauce
1 medium onion chopped
˝ green bell pepper chopped
1 stalk celery chopped
2 stalks green onion chopped
2 toes garlic chopped
2 teaspoons parsley chopped
A little olive oil

Directions:
Directions:
In a deep heavy pot, heat the olive oil and sauté the chopped seasonings until tender.

Add the sliced sausages and continue cooking until brown around the edges.

Using a turkey baster, suck off any grease.

Lower the fire. Add the frozen vegetables. Add the Ragu. Mix well.

Season to taste. Add ˝ cup water, cover and simmer until the lima beans are tender.

When I was a child, I spent a lot of time with my grandmother, Mamee. She lived in the Carrollton section of town, and particularly during the summer months, the fruit and vegetable man would ride through the neighborhood hawking his wares. When he had fresh lima beans and corn on the cob, Mamee and I would make Succotash. Of course, my recipe has been modified to use frozen vegetables and I incorporated the sausage. Enjoy!
