Ingredients: 1 onion 1 green or red pepper a few garlic cloves Left over HAM 1 large can of whole tomatoes up to 1 pound of elbow macaroni (equal amount to Ham amount) 1+ 1/4 cup sharp cheddar cheese

Directions:chop up onion & pepper then simmer in a pan with garlic until soft but not brown. Grind up left over ham. Add to simmering veggie mixture & let sizzle in pan until lightly browned Add can of tomatoes (with a little water from rinsing can out) Cook macaroni then add to meat mixture Grate or cut up cheese then add to mixture & heat until bubbly |

Notes: This was Ruth's favorite way to use up left over HAM after Easter or any Holiday. All ingredients are approx. amounts, more to your own taste. Don't use too much macaroni - should be close to the same or a little less than the amount of Ham. Stewed tomatoes can be used instead of whole tomatoes Other veggies like peas can be added as well Other cheese can be used instead of cheddar.
