6 T. butter
1/3 C sugar
2 eggs
1 1/2 C mashed banana
1 1/2 C flour
1 tsp. soda
1/2 tsp. powder
1/4 tsp. salt
1/4 tsp. vanilla
1/2 C shredded coconut (optional)
1 C chopped nuts of your choice (optional)

Directions:
Directions:
In a mixing bowl, cream the butter and sugar. Add eggs and mix well. Add remaining ingredients and mix until well blended. Pour into a greased & floured loaf pan. Bake for ~1 hour at 350º.

This is the Neukom "go-to" banana bread recipe. It does well when double or tripled, and sometimes I substitute some of the flour with whole wheat. It's not too sweet but nice and moist!
