7-8 lb standing rib roast
1 tbsp kosher salt
1 1/2 tsp freshly ground black pepper

Directions:
Directions:
Two hours before roasting, remove meat from refrigerator and allow it to come to room temperature. Preheat oven to 500º. Place oven rack on the second lowest position. Place roast in pan bones side down and generously coat the top with salt and pepper. Bake uncovered for 45 minutes. Lower temperature to 325º and bake for another 30 minutes. Increase temperature to 450º and bake for another 15-30 minutes or until the internal temperature of the meat is 125º. Make sure thermometer is exactly in the center of the roast. Remove roast from oven and transfer to a cutting board. Cover tightly with foil and allow the meat to rest for 20 minutes. Carve and serve with drippings from bottom of roasting pan.
