1 lb chuck steak or round steak cut in thin strips
1/4 cup soy sauce
1 clove minced garlic
1/2 tsp ground ginger
1/2 tsp black pepper
1/4 cup salad oil
1 cup thinly sliced onion
1 cup red and green peppers cut in 1" squares
1/2 cup thinly sliced celery
1 tbsp corn starch
1 cup water
2 fresh tomatoes cut in chucks

Directions:

Cut steak in thin strips across grain. Combine soy sauce, garlic, ginger and pepper. Add beef, toss and set aside while preparing vegetables. Heat oil in pan. Add beef mixture and fry over high heat until browned. Taste meat. If it is not tender, cover and simmer for 30 to 40 minutes over low heat. Turn up heat and add onions, peppers, and celery. Toss until vegetables are tender crisp about 10 minutes. Mix cornstarch with water. Add to pan, stir and cook until thickened. Add tomatoes and heat thoroughly. Serve over rice.
