1 1/2 C warm water
1 C evaporated milk
1 T. yeast
1/2 C sugar
1 tsp. salt
2 eggs
1/4 C shortening
~7 C flour

Directions:
Directions:
Dissolve the yeast and sugar in the warm water. Add the salt, eggs, milk and shortening and mix well. Add the flour little by little, beating at the batter stage until it's smooth. Switch to the dough hook and add remaining flour until a soft dough is formed. Cover and let rise in the refrigerator overnight.
Roll the dough on a floured surface until it's about 1/8" thick. Cut into any desired shape and drop into oil (360º). Turn them to evenly brown and remove when golden. Sprinkle with powdered sugar.

These are not sweet like a doughnut, and they go well with strong coffee. Powdered sugar is the typical sprinkling, but I think cinnamon and sugar, or a drizzle of homemade jam would be good too. They're best hot, so the dough can be made early, but plan to serve immediately after frying!
