1 c fiely grated raw carrots
1 c brown sugar
1tsp baking soda
1 tsp melted shortening
1 c boiling water
2 eggs
2 1/2 tsp baking powder
1 tsp salt
1 1/2 c unbleached flour
1 c whole wheat pastry flour
1 c chopped walnuts
1/2 c raisins

Directions:
Directions:
Combine carrots, brown sugar, baking soda and shortening in a large bowl. Pour on boiling water, stir to mix and set aside to cool. Beat eggs with a fork and add to the cooled carrots. Sift together the baking powder, salt and unbleached flour. Add to carrots with the whole wheat flour, nuts and raisins. Pour into a greased 9 X 5 X 3" loaf pan. Let stand for 5 min. Bake for 1 hour in a 350ºF oven. Remove from pan and cool on a wire rack. Slice thin.
