1 c. oil
3 eggs
2 c. sugar
1 tsp. vanilla
2½ c. flour (she uses self-rising; if you use plain flour, add 1 tsp. soda and 1 tsp. baking powder)
1 tsp. cinnamon
½ tsp. soda
½ c. water
½ tsp. salt
3 c. apples, peeled and chopped (I use Granny Smith)
½ c. chopped nuts

Topping:
½ stick butter
1 c. brown sugar
¼ c. milk

Caramel Icing:
1 c. brown sugar
1 stick butter
¼ c. milk

Directions:
Directions:
Beat eggs; add oil, sugar and vanilla; mix well. Add soda dissolved in water. Add flour, cinnamon and salt; beat until well mixed. Stir in apples and nuts. Bake in greased 9"X11" or 9"X13" pan, 1 hour at 325º.
Check pan after 45 minutes, as it may not need to bake an hour.

Topping:
Combine all ingredients; boil 2 minutes over low heat. Pour over warm cake.

Caramel Icing:
Combine all ingredients; boil 2 minutes over low heat. Add 1½ c. powdered sugar, sifted. Beat until smooth. Ice cake.

Personal Notes:
My 95 year old friend at church makes this cake for all her family's holidays and special occasions. She always uses the Caramel Icing, so in the spirit of "if it ain't broke, don't fix it" that's what I use also!
