½ cup cornmeal
¼ cup flour
½ teaspoon baking powder
1 tablespoon oil
2 teaspoons maple syrup
½ cup soymilk
½ teaspoon apple cider vinegar
pinch of salt

Directions:
Directions:
1- Whisk soymilk and apple cider vinegar in a small bowl
2- In a large bowl mix: cornmeal, flour, baking powder, salt
3- Add oil to small bowl
4- Add maple syrup
5- Use wire whisk to mix liquid. It will be foamy and bubbly
6- Pour wet ingredients into dry ingredients
7- Mix with wooden spoon
8- Ask adult to put preheat oven to 350 º
9- Place muffin cups in tin
10- Fill cups half full
11- Ask adult to put muffin tins in oven
12- Cook for 10 minutes
