Crust:
1 pkg. (20 oz.) Refrigerated Sugar cookie dough
or
1/4 cup butter
1/2 cup sugar
1 egg
1/4 tsp. vanilla
1/4 tsp. lemon extract
1-1/4 cups flour
1/4 tsp baking soda
1/4 tsp. baking powder
1/4 tsp. salt

Filling:
1 pkg. (8 oz.) cream cheese
1/3 cup sugar
1/2 tsp. vanilla

Fruit:
Fresh or canned sliced peaches
Whole strawberries,sliced or cut in half
Fresh or frozen blueberries
Sliced kiwi
Sliced bananas

Glaze:
1/4 cup prepared peach pie glaze
or
1/4 cup orange marmalade
1 tbsp. water
or
1/4 cup sugar
1/4 cup orange juice
1/4 cup water
2 tsp. cornstarch

Directions:
Crust: Heat oven to 375ºF. Slice cookie dough as directed on package. Arrange in the bottom of 15 x 10 x 1 inch baking pan. Using floured fingers, press dough evenly into pan. Bake for 16 to 20 minutes or until golden brown. Cool completely.
or
In large mixing bowl, cream butter and sugar; beat in egg and extracts. Combine flour, baking soda, baking powder, and salt; add to creamed mixture. Beat well. Cover and chill for 30 minutes. Press into a 12 or 14 inch pizza pan. Bake at 350ºF for 12 to 14 minutes or until golden brown. Cool completely.

Filling: In small bowl, beat cream cheese, sugar and vanilla until fluffy. Spread mixture over cooled cookie crust. Arrange fruit over cream cheese.

Glaze: Spoon peach pie glaze over fruit
or
combine marmalade and water; mix well and spoon over fruit.

Combine sugar, orange juice, water and cornstarch in a saucepan; bring to a boil, stirring constantly. Boil for 2 minutes or until thickened. Cool to room temperature, about 30 minutes. Brush over fruit.
Refrigerate at least 1 hour before serving.
