1¾ cup flour
1¼ tsp baking powder
½ tsp baking soda

⅔ cup sugar
⅓ cup shortening
2 eggs
2 Tbsp milk
2 bananas (the riper the better), mashed

Directions:
Directions:
Mix the flour, baking powder and baking soda. In a separate bowl mix the sugar and shortening. Add one egg, continue to beat, add 1 Tbsp milk, beat, add second egg, beat, add remaining 1 Tbsp milk. Then add bananas, and slowly add flour mixture to the wet ingredients.

Bake for 40 minutes at 350º

The handy dandy Pampered Chef tool that the Z's gave us for Christmas mashes the bananas beautifully. My bread doesn't turn out nearly as yummy as aunt Jenny's. But I keep trying.
