1 vanilla bean
1 ¾ c sugar
2 c flour
¾ tsp baking powder
½ tsp salt
1 c unsalted butter, softened
5 large eggs

Directions:
Preheat oven to 325º.
Butter and flour 9x5x3 loaf pan.

Make vanilla sugar:
Cut vanilla bean into 1 inch pieces. Process sugar and vanilla together until bean is finely ground. May need to sift if any woody bean pieces are left. Set aside.

In a large bowl, mix flour, baking powder and salt.

In another large bowl, beat butter until creamy, about 1 minute. Gradually add vanilla sugar until light in texture, approximately 2 minutes. Beat in eggs, one at a time.
Gradually add flour mixture and beat until just combined.
DO NOT OVERBEAT!
Pour batter into pan; smooth top with spatula.

Bake on center rack until sides have shrunk from the pan and a toothpick comes out clean, about 1 hour 20 minutes, may take a lot longer.

Cool in pan on rack for 10 minutes. Remove from pan and cool completely.
