4 cups strawberries, mix of cut up and crushed
1-1/2 cups sugar
5 T. Ball Instant Pectin

Directions:
Directions:
In a small bowl, stir together sugar and pectin; set aside. Rinse strawberries; cut half into pieces and crush the other half with a potato masher until you measure a total of 4 cups. Pour into large bowl and add sugar mixture on top. Stir to blend; then continue to stir for 3 minutes. Ladle into clean freezer jars, leaving 1/2 inch for expansion. Secure the lids on jars and let sit at room temperature for at least 30 minutes till thickened. Can be refrigerated for 3 weeks or frozen for 1 year. Yield: 5 jars (8 oz.)

Delicious! We make at least one batch every year during strawberry season. Freezer jam will have a softer set than traditional cooked jam. But it does have a fresher taste.
