Peanut Dressing Ingredients:
1/3 cup peanuts
2 tablespoons sesame oil
3 tablespoons rice vinegar
2 tablespoons soy sauce
2 teaspoons peeled fresh ginger
2 teaspoons sugar, or sugar substitute such as stevia
Juice of 1/2 lime
1 clove garlic
1/4 teaspoon red-pepper flakes
Salad Ingredients
6 hard boiled eggs
2 ounces cellophane, rice stick, or Chinese vermicelli noodles
1 large head romaine, green leaf, or red leaf lettuce
2 carrots, julienne or shredded
1 red bell pepper, cut into thin strips
sesame seeds

Directions:
Directions:
To make the dressing combine ingredients in blender until smooth.

For the salad, soak the noodles in hot tap water for 10 minutes until they are soft (no boiling required), drain. Assemble lettuce into salad bowls, top with the noodles, vegetables, and hard boiled egg slices. Top the salads with the dressing and sprinkle with sesame seeds. Makes approx 4 salads.
