3 cups old-fashioned rolled oats
1 cup unsweetened dried coconut
1 cup nuts of your choice-sliced almonds, sunflower seeds, pumpkin seeds, walnut pieces, etc. Mix a 1/2 cup of 2 kinds of 1/3 cup of 3 kinds of your preference.
1/2 cup chopped dates, raisins, dried cranberries, or chopped dried fruit of your choice.
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1 teaspoon vanilla
1/2 teaspoon salt
1/3 cup coconut oil (melted) or canola oil
1/2 cup honey

Preheat oven to 275 and line a baking sheet with parchment paper.

Mix together oats, coconut, nuts, dried fruit, and spices. In a small sauce pan heat oil or melt coconut oil on low and add honey and vanilla. Pour over the dry ingredients and stir util evenly combined.

Spread in a single layer on the baking sheet. Baking, stirring every 15 minutes, until golden brown, about 45 minutes. It should be crispy when it cools completely. It stores well for weeks, tastes better than store bought granola, and allows you to control the ingredients and include your favorites.

Serve with yogurt and fruit.
