2 quarts pickling onions, peeled
1/2 cup coarse pickling salt
3 cups white vinegar
3 cups sugar

Directions:

Sprinkle salt over peeled onions and let stand overnight.

Drain and rinse with cold water.

Bring sugar and vinegar to a boils.

Simmer for 5 minutes and then add onions.

Simmer for another 5 minutes - do not boil.

Put in hot, sterilized jars and cover with the hot liquid and sterilized lids.

Process in hot water bath for 10 minutes.

Peeling onions will take the most preparation time.
