3/4 cup onions, finely chopped
1 clove garlic, finely chopped
1 can (2 oz.) stewed or diced tomatoes
1 can (6 oz.) tomato paste
1 bay leaf
1 tsp basil
1/2 tsp oregano
1 tsp marjoram
1/4 tsp thyme
1/4 tsp crushed rosemary
1/2 tsp salt
1/8 tsp pepper

Directions:

Sauté onions and garlic in oil until soft but not brown.

Add remaining ingredients, mix well and break up larger pieces of tomato.

Bring to a boil, reduce heat and simmer uncovered for 1 1/2 to 2 hours, or until sauce has thickened and reduced to 3 cup quantity.

Dad always adds more garlic and all spices (except salt).

If you like it a bit hot, add a few chili flakes.

This sauce can be revised to Bolognese by adding: 1/2 lb. browned beef to cooked sauce and simmering for an additional 20 to 30 minutes.
