Slices of freshly cooked beets
Slices of oranges
About 1/3 cp of fresh basil leaves, cut lengthwise just before serving (will darken if prepared ahead)
Nuts that you have lightly toasted and choppedd

VINAIGRETTE

Lemon juice
Safflower oil
salt and freshly ground black pepper to taste
Honey to taste--not much
Minced shallots--about 2 tsp

This is just a salad that I started preparing after having eaten one in a restaurant and wished to try to approximate it at home. So simple. I think it does rely on freshly cooked beets and good oranges in season. To cook beets, just remove long green stems, scrub and put in pan with water almost covering them. Bring to boil, turn down and simmer until tender--about 30-60 min., all depending on how young beets are. Remove from water, let cool, and slice. Vinaigrette is just standard method, whisking oil into lemon juice. If you think lemon is too tangy, you could use a combination of apple cider vinegar/lemon juice.
