2½ CUPS SIFTED ALL PURPOSE FLOUR
1 TSP. SODA
1 TSP. CREAM OF TARTAR
½ TSP. SALT
1½ CUPS SIFTED POWDERED SUGAR
1 CUP SHORTENING
1 EGG
2 TBSP. MILK
1 TSP. VANILLA
½ TSP. ALMOND EXTRACT

SIFT FLOUR, THEN MEASURE. ADD SODA, CREAM OF TARTAR, SALT AND SUGAR AND SIFT INTO LARGE MIXING BOWL. ADD SHORTENING TO FLOUR MIXTURE AND CUT IN WITH PASTRY BLENDER UNTIL MIXTURE LOOKS LIKE COARSE MEAL.
MIX EGG, MILK AND EXTRACTS IN SMALL BOWL. ADD TO FLOUR MIXTURE AND BLEND THOROUGHLY. DO NOT ADD EXTRA LIQUID. MIXING WITH HANDS MAY BE NECESSARY. WORK DOUGH INTO A LARGE BALL WITH HANDS.
DIVIDE DOUGH INTO THIRDS. ROLL EACH THIRD ON LIGHTLY FLOURED BOARD UNTIL ABOUT ¼" THICK. CUT WITH COOKIE CUTTER AND PLACE ON GREASED COOKIE SHEET ( OR FORM INTO BALLS AND PRESS WITH THE BOTTOM OF A GLASS DIPPED IN SUGAR). BAKE ON THE MIDDLE RACK OF OVEN FOR 6 TO 8 MINUTES. REMOVE AND PLACE ON WIRE RACK TO COOL.
