2 qts milk
2 cups rice (raw)
1 tsp salt
1/2 cup butter
1-1/2 doz eggs, beaten
1-3/4 cups sugar
3 tsp lemon flavoring
1 12-oz carton cottage cheese (creamed)

Directions:
Directions:
Preheat oven to 3750º

In large saucepan bring milk to a boil. Stir in rice and salt. Cook over medium heat until tender. Remove from heat, stir in butter. Set aside until cool. Mix in beaten eggs, sugar, lemon, flour and cottage cheese. Pour into well greased pyrex dish. Bake 1-1/2 hours or until cooked in the middle.
