RICE

1-1/2 cups cooked rice, drain well
8 eggs, well beaten
1 cup sugar
1 tsp vanilla
1 tsp lemon

CUSTARD

3 cups milk
4 eggs well beaten
1/3 cup sugar
1/2 tsp vanilla
1/4 tsp salt
1/2 tsp lemon

Directions:

Preheat oven to 350º


RICE

Add just enough milk to rice to cover, set aside.

Add sugar, vanilla and lemon to beaten eggs. Add rice. (Taste for sweetness.) Put in 9x12 pan.

CUSTARD

Heat milk to scald and cool slightly, set aside. Add sugar, vanilla, salt and lemon to beaten eggs. Put egg mixture in milk slowly and pour on top of rice.

Bake 1 hour.
