1 LB Ground Beef or Turkey
1 Can Mexi Corn
1 Can Rotel
1 10oz Enchilada Sauce
1 can Green Chilis, diced
1 Jiffy Cornbread Mix
1 Egg
⅓ C Milk
Shredded Cheese, Mexican or Colby Jack
Sour Cream

Directions:
Directions:
Preheat oven to 400.
Brown Meat. Drain.
Add in all canned ingredients and simmer.
Mix Jiffy mix with egg and milk.

Put meat mixture in 9x13 pan.
Add a layer of Cheese.
Spread Jiffy mixture on top.

Bake about 25 minutes, until Cornbread is brown.

Top with Sour Cream if desired.
