4 MEDIUM COOLED BAKED POTATES - CUT INTO BITE SIZE CHUNKS
½ SMALL ONION, CHOPPED
6 - 8 BOILED EGGS (I LIKE LOTS OF EGGS)
¾ CUP MAYONNAISE
1 TSP. MUSTARD OR TO TASTE
½ TSP SALT OR TO TASTE
PEPPER TO TASTE

PUT CHUNKED POTATOES, AND ONION INTO LARGE SIZED BOWL. PEEL EGGS AND CUT IN HALF. CHOP THE WHITES AND ADD TO POTATOES. DROP YOLKS INTO MEDIUM BOWL AND MASH WITH FORK. WITH WHISK, COMBINE EGG YOLKS WITH REMAINING INGREDIENTS. TRANSFER TO POTATOES AND MIX THOROUGHLY. CHILL.

You can bypass separating the eggs and just chop the whole egg, but it really makes a difference in flavor to mash the yolks and put them in with the dressing.
If you're using this for a picnic, you may want to keep the mashed egg yolks separate and add them to the salad just before serving. Don't want Sal to join the party!!
