Cranberry Bars Recipe

One package fresh cranberries.
4 eggs
2 c. sugar
2 c. flour
1 c. oats, quick or old-fashioned
2 tsp. almond extract
1½ sticks margarine, melted
2 c. chopped walnuts

Directions:
Directions:
Rinse cranberries, remove any shriveled ones, and pat dry. Chop them roughly.

Beat together eggs and sugar. Add next four ingredients and mix well. Pour into a greased jelly roll pan.

Spread cranberries and nuts over top and pat lightly to press them into the dough.

Bake at 350º for 35 - 40 minutes, until tester comes out clean.

Cut into bars.


Optional:
Drizzle with glaze made with 2 cups confectioners sugar, 1 tsp. Almond extract, and enough milk to thin to glaze consistency.

You can buy fresh cranberries in season and freeze them for later use. They do not have to be thawed thoroughly to be used in this recipe. And you do not have to add any sugar to them before adding to the dough. The sweet dough, tart berries, and almond flavoring are a nice combination.
