2 Tbsp. Olive Oil
Garlic (pressed) to your liking...
1/2 White Onion (chopped)
Cilantro (chopped) to your liking...
1 Can (14 1/2 oz.) Mexican Tomato (puree in blender)
1 Can (14 1/2 oz.) Chicken Broth
1 Cup White Rice

Directions:
Directions:
Heat oil in skillet. Add rice, onion, & garlic. Cook on medium heat, stirring frequently until rice is golden brown. Add chicken broth and tomato sauce (pureed) and bring to a boil. Reduce heat and simmer for 20 to 25 minutes, or until rice is done. Remove from heat and add cilantro - 5 minutes.
