Mediterranean Orzo Rice Recipe

1/2 Tbsp. Olive Oil
1 Small Onion
1 Garlic Clove
1 Cup uncooked Orzo Pasta
2 1/4 cups unsalted Chicken Stock
1 Tbsp. Greek Rub
3 Cups fresh Baby Spinach Leaves
1/4 Cup jarred roasted Red Bell Peppers, chopped
1/2 Cup crumbled Feta Cheese, divided
Directions:

Heat oil in a 2 quart casserole dish, *(use a stove top/microwave safe dish), over medium heat, 3-5 minutes or until shimmering. Cut onion into small chunks. Using a food chopper, finely chop onion.

Add onion, a garlic clove (pressed), and orzo pasta to casserole dish. Cook uncovered, 4-6 minutes or until orzo is lightly toasted, stirring frequently.

Remove casserole dish from heat. Stir chicken stock and greek rub into orzo. Microwave covered, on HIGH 12-13 minutes or until most of the liquid is absorbed and orzo is tender.

Remove casserole from microwave. Add spinach, red bell peppers and half of the feta cheese. Cover and let stand 4 minutes or until spinach starts to wilt. Stir until combined. Sprinkle with remaining feta.

*This is a Pampered Chef Recipe. So that is the Casserole dish that I use.

Cooks tip: 1 cup chopped frozen broccoli (thawed) can be substituted for the spinach.
