1-2 tsp olive oil
3 stalks celery, chopped
1-2 medium carrots, chopped
1 medium yellow onion, chopped
2 cloves garlic, minced
4 cups water
4 cups vegetable broth
5-6 red potatoes, chopped (skin on)
2 - 15 oz can cannellini beans or 5 cups cooked fresh beans
1 large bunch of kale, deveined and torn into pieces

* In sauté pan heat oil over medium heat. Add celery, carrots, onion; cook until onions are softened, about 4-5 mins
* Add garlic and cook, stir constantly for another minute or so, remove from heat and set aside
* In a large saucepan over med-high heat bring water and vegetable broth to a boil. Add cooked vegetables and potatoes, reduce heat to med-low and simmer 20-30 mins or until potatoes are done
* Add beans and kale; cook 10-15 mins stirring frequently, until heated through and kale has wilted.
