1 onion chopped
3 Anaheim peppers (or pepper of your choice)
2 garlic cloves minced
˝ tbsp oregano
2 tbsp olive oil
4 - 14 oz cans garbanzo beans (undrained)
1 - 28 oz can stewed tomatoes (undrained)
2 - 4 oz cans salsa casera
1 bag tortilla chips for dipping
Grated jack cheese

Directions:
Directions:
* Sauté onion, peppers in olive oil until soft. Add garlic and oregano and sauté 2 more minutes.
* Add beans and tomatoes (with juices), and cans of salsa casera. Stir and simmer 25-30 mins.
* Serve with tortilla chips and top with cheese.

Great for camping and good all year round! I sometimes add shrimp or chicken to it.
