4 eggs, beaten
2 c all purpose flour
1 c sugar
2 tsp baking powder
1 ts[ cinnamon
½ tsp baking soda
3 c finely shredded carrots, lightly packed
¾ c cooking oil

Directions:
Directions:
1. Allow eggs to stand at room temperature for 30 minutes. Meanwhile grease and flour 9'' x 13" cake pan. In large mixing stir together flour, sugar, baking powder, cinnamon and baking soda.

2. In medium bowl combine eggs, carrots, and oil. Add egg mixture to flour mixture; stir until combined. Pour batter into prepared pan.

3. Bake at 350ºF for 40-50 minutes or until toothpick inserted in centre comes out clean.

If desired Cream cheese frosting may be used.

When dad I were first married I had to make a cake for some special occasion and I had used another recipe. Well it flopped! So Dad says I bet I can make a better cake, so I found this recipe and it turned out awesome! So this has been my go to recipe ever since!!
