Ingredients: So let me start by saying this isn't actually a recipe, more a list of criteria. This came about one nite when I had no ideas for dinner and was rummaging through the pantry. I had a little of everything, no broth, not enough beef or chicken, and a bunch of dry lentils and canned veggies. The basis of this soup is to make a broth, Sear the meat, precook any garlic, onions and celery, make sure to put the things that take longest to cook in ASAP
Olive oil Beef Chunks 1 large Chicken breast with bones and skin 4 Cups Water 2 Shallots or 1/2 sweet onion Garlic cloves Minced (I had several clusters with tiny cloves, or 1/4 tsp garlic powder) 1 stalk Celery (diced) 2 pats Butter salt & pepper to taste 2 Tsp Italian Seasoning 1 Tsp Marjoram 1 Tsp Oregano a Dash cumin 1/2 Cup dry Lentils Carrot, Diced 1-2 potatoes (peeled and diced) 1 can corn (nibs, whole or other) 1-2 cans beans (I like lima and kidney) 1 can tomato (chunked, stewed, diced, whole or fresh)

Directions:This works for a stew pot and a crock pot.
For the Chicken, fill pot with 4 cups water and boil it for 15- 20 minutes. For the Beef, season with salt and pepper. Saute' in olive oil at high heat until browned on all sides. Remove meat and put into pot, but leave juice in the pan. In beef juice, add butter, shallots/onion, garlic and celery. Cook until onions are translucent then dump into the Pot.
Add all the spices into the pot as well as the Lentils, potatoes & carrots. (The things that need to cook the longest) Carefully remove chick from the boiling pot and set on carving board to cool. Pour the now chicken broth into the pot and stir. Set to medium-high heat for 30 minutes. Meanwhile, once the chicken is cool enough to handle, pull all the meat off the bones and dice. Toss it in the pot too.
In Crock Pot: Add Canned Tomatoes, juice and all (you may need to dice larger chunks) Set on high for 4 hours. Drain the other canned things and add about 30 minutes before serving. If you add them sooner, they will turn to mush.
In Soup Pot: For tomatoes, open the can and drain liquid into the pot. Depending on which type you have hiding in the back of the pantry, you may need to chop them up before tossing in the pot. Drain the beans, corn and any other canned things you want to put in there, then add those to the pot too. Give good stir and bring to low boil. Let it go at a low boil for at least 45 minutes or more. |
