4 large baking potatoes
4 T. butter
1½ c. shredded cheddar cheese
2 T. chives
salt & pepper to taste
6 pieces fried bacon-crumbled
sour cream

Directions:
Directions:
Bake potatoes at 400º until tender and skins are very crisp, about 1 hour and 15 minutes. Cut potatoes in half lengthwise and scoop out centers into a bowl. Add butter and mash until smooth, fold in cheese, sour cream, chives, salt, pepper and bacon. Mound mixture back into potato shells and bake for another 15 minutes.
