2 T. chopped onion
¼ c. butter
2 c. cold mashed potatoes
1 egg-beaten
¼ c. flour
Directions:
Directions:
In a 10" skillet, cook onion in 1 T. of the butter. Drain onion, reserving drippings in skillet. Combine onion, mashed potatoes & egg. Shape into 6 3-inch patties. Dip in flour. Add the remaining 3 T. butter to skillet. Heat over medium heat. Add potato patties and cook 5 minutes or until browned.
