Flour
2 beaten eggs
Salt and pepper
1 cup fine dry bread crumbs
½ cup grated Parmesan cheese
6-8 Tbsp oil
Mozzarella cheese - sliced

Tomato Sauce:
2 Tbsp margarine
2 Tbsp oil
1 small onion, chopped
1 whole clove garlic
1 (19oz) can tomato sauce
½ cup water
½ tsp dry basil
Salt and pepper

Directions:
Directions:
Season eggs with salt and pepper.
Mix crumbs with 4 Tbsp grated parmesan.
Lightly coat chicken breasts with flour, dip in egg and then in bread crumbs.
Brown in hot oil.
Place in shallow baking dish.
Pour tomato sauce over the chicken and top with mozzarella cheese and sprinkle remaining parmesan.
Bake at 350ºF for ½ to ¾ hour.

For the Sauce: Saute onion and garlic in margarine and oil.
Remove garlic and stir in tomato sauce, water, basil, salt and pepper.
Simmer uncovered for 15 minutes.
