Sauce: 3 cup white sugar ¾ tsp turmeric 1 tsp ginger ½ cup flour ½ tsp celery seed ½ tsp prepared mustard
Peel and put through course food chopper. Add 2 Tbsp of salt and let it sit overnight. Drain and discard juice. Add the sauce. Mix and add 2½ cups of vinegar and 1 cup of water. Boil for 5 minutes. Add cucumber and onion mixture and bring to a boil for about half an hour, stirring occasionally.
