1 package (15 oz.) vanilla cake mix, plus ingredients to prepare mix
2 ripe bananas, mashed (about one heaping cup)
1 t. baking soda

1. Preheat oven to 350º F. Spray 9 X 13 inch baking pan with nonstick cooking spray.

2. Prepare cake mix according to package directions. Stir baking soda into bananas; add to batter and beat until well blended. Spread batter into prepared pan.

3. Bake 35 to 40 minutes or until toothpick inserted into center comes out almost clean. Cool completely in pan on wire rack.

This is "simply" delicious. You may sprinkle with powdered sugar after bread is cooled to give it a little pa-zaz! This is a good solution for using up bananas that are too ripened to eat traditionally.
