1 dozen eggs (4)
2 1/4 box (4 1/2 c) of brown sugar (a box =1#)(1 1/2 c)
3 15 ounce cans lakeshore pumpkin (1)
3/4 tsp. nutmeg and ginger (1/3 tsp.)
3 T cinnamon (1)
1 1/2 tsp. salt (1/2)
2 cans evaporated milk (1 c)
1 1/2 c water (1/2 c)

Directions:
Preheat oven to 400º. Mix all ingredients until well blended. Fill pie shells and bake for 45 minutes or until a knife inserted into the center comes out clean.

This recipe makes 7 eight inch pies, as a kid we would double the recipe. They would be gone within a couple days. The first couple times I hosted Thanksgiving or Christmas dinner I made the same amount. I always ended up sending people home with pies (usually more than one). I have broken down the recipe for one can (see the numbers in parentheses after the ingredient). Now about the Lakeshore pumpkin, you can still get it occasionally. Libby's works just as well.
