-3½c. flour
-¾tsp. baking powder
-1½tsp. baking soda
-1½tsp. salt
-1tsp. cinnamon
-1¾c. sugar
-1c. canola oil
-1tsp. vanilla extract
-4 eggs
-2c. grated (medium fine) zucchini
-1c. nuts (optional)

Directions:
Directions:
Preheat oven to 350ºF. Grease 2 9by5in. pans. In a mixer, mix flour, baking powder, baking soda, salt, and cinnamon. Add in canola oil, sugar, and vanilla extract. Beat in eggs one at a time. Alternate between pouring in a small portion of the flour and a small portion of the zucchini. Evenly distribute batter among the two pans (the pans should each be about half full). Bake for 45-50 minutes.
