Pie Crust

2 cups peeled, diced potatoes
1 3/4 cups diced carrots
1 cup butter
2/3 cup chopped onion
1 cup flour
1 3/4 tsp salt
1 tsp. dried thyme
3/4 tsp. pepper
3 cups chicken broth
1 1/2 cups milk
4 cups cubed cooked chicken
1/2 cup peas

Heat oven to 425º. Put carrots and potatoes in pan, add water to cover. Bring to a boil, cook, covered, 8-10 minutes and drain. In a pan heat butter, add and cook onion for about 5 minutes until soft. Stir in flour and seasonings until blended. Gradually add broth and milk, bring to a boil, stirring constantly. Stir in chicken, peas, potato and carrots and remove from heat. Place bottom crust in 2 9-inch pie pans. Fill with mixture, cover, seal, and add vents. Bake 35-40 minutes. Let stand for 15 minutes before cutting.

6 T chilled, cubed butter
3/4 cup shortening
1/2 cup ice water

Mix flour and salt. Cut in butter and shortening. Add ice water, a tablespoon at a time until combined. Mix by hand to incorporate. Refrigerate 2 hours.
